The Guidelines Ways to Relay The Method of Making Kanom Farang Kudeejeen From The Elderly in Kudeejeen Community, Bangkok Province
Abstract
The purpose of this research was to study the history of KanomFarangKudeejeen. How to inherit and
conservation of method of making KanomFarang Kudeejeen from the past to present. For the purpose of
manage knowledge in inheriting and propagate method of making KanomFarang Kudeejeen. Used the qualitative
research through in-depth interviews with the heir to making KanomFarang Kudeejeen.
The studied indicated that KanomFarang Kudeejeen was a dessert that has inherited for a long time since
the Ayutthaya period. The traditional recipe from the Portuguese to propagated in the Thai culture. It’s inherited
only in the family that had been relaying the method of making KanomFarang Kudeejeen from the Portuguese
that live in Kudeejeen community. At present, there is still a succession KanomFarang Kudeejeen traditional
recipes, but have a makeup with fruit on a top of the cake which different from the original recipe and
developed the sales and production by adopting technology to help and customized the equipment to making
dessert, but have still the identity of dessert. The process of making KanomFarang Kudeejeen doing requires
specific tools. The maker must have made a conscious effort and expertise is tremendous, so it must be trained
as well. From the above, it causes problems in propagating method of making KanomFarang Kudeejeen to others
that were not the heir. But there were many ways that people can help preserve and inherited the method of
making KanomFarang Kudeejeen, moreover, research study and then taken out to disseminated carried out
through various media, or encourage and support cultural activities and local wisdom continuously
